The experimental winery has all the oenological equipment necessary for make experimental vinification on a micro and meso scale:

100 stainless steel containers of 100 liters
15 heat-conditioned containers from 2 to 20 hl
Pneumatic press for volumes from 30 to 300 liters
Destemmer / crusher only for small volumes 30-300 L
Thermo-hygrometric conditioning cells
Wooden containers for wine aging
Set of oenological pumps

APPLICATIONS AND SERVICES
The experimental winery carries out experimental microvinifications for:
- and oenological research projects of the Department of Agricultural Sciences, Forestry and Food (DISAFA) of the University of Turin
- Experimental vinifications to obtain the necessary documentation for the homologation of new vine variety clones, that is, their registration in the Catalog National Vine Varieties, and for the registration in the catalog of historical, rare or new constitution
- Winemaking tests for the testing of new oenological equipment, adjuvants or additives
- Development of winemaking protocols useful for obtaining the certifications of process or product
- Experimental vinifications for the verification of the efficiency of microbial starters for use oenological
- Sparkling wine tests for the development of new products for the market
Price list
Rates are defined according to specific requests.
Possibility of on-site measurements
It is possible to access the infrastructure by reservation, accompanied by authorized staff, and / or send samples for analysis (without directly accessing the structure). The technical feasibility of the request is evaluated and the experiments.
